Super Simple Key Lime Pie
This really quick & easy
recipe comes from the BBC. Their receipe says to use 8 limes, which seems insane to me. 3 or 4 are enough - which still makes the final cake very tart. The acid of the juice appears to make the cream & condensed milk mixture curdle and go firm.
Ingredients
- 150g butter
- 375g digestive biscuits, crushed
- 3 or 4 large limes, juice and zest
- 570ml double cream
- 397g/14oz tin sweetened condensed milk
Recipe
- Mix crushed biscuits & melted butter and press into base of 9in cake tin. Chill in fridge.
- Place the lime juice into a large bowl, whisk in the cream and condensed milk for 1–2 minutes
- Stir in the lime zest and pour onto the prepared biscuit base
- chill in the fridge for 1–2 hours
