Super Simple Key Lime Pie

This really quick & easy recipe comes from the BBC. Their receipe says to use 8 limes, which seems insane to me. 3 or 4 are enough - which still makes the final cake very tart. The acid of the juice appears to make the cream & condensed milk mixture curdle and go firm.

Ingredients

  • 150g butter
  • 375g digestive biscuits, crushed
  • 3 or 4 large limes, juice and zest
  • 570ml double cream
  • 397g/14oz tin sweetened condensed milk

Recipe

  1. Mix crushed biscuits & melted butter and press into base of 9in cake tin. Chill in fridge.
  2. Place the lime juice into a large bowl, whisk in the cream and condensed milk for 1–2 minutes
  3. Stir in the lime zest and pour onto the prepared biscuit base
  4. chill in the fridge for 1–2 hours
