Vegan Bangers and Mash
A pretty simple dish, the only complicated part being the vegan gravy. I use Beyond Meat vegan sausages, fried or grilled. The mashed potato is easy enough - I add soy milk so it's not dry, a healthy amount of dried parsley, and salt and pepper to taste.
Ingredients
- 1 tbsp oil
- Large onion
- 1 tsp sugar
- 45ml Red Wine
- Thyme
- Marmite
- Mustard
- Salt and pepper
- Vegetable stock cube
- 1 tsp Balsamic Vinegar
- 25g Cornstarch
Recipe
- Heat oil, sugar and onion on high for 3 minutes then reduce to medium and cook a further 10 minutes until the onion is caramelized.

- Add the wine, thyme, pepper, mustard, stock cube, balsamic vinegar and 300ml of water.
- Mix in a tiny smidgen of Marmite (no more than ΒΌ of a teaspoon) and blast for another 4 minutes on high.

- Mix the cornstarch with a little water and mix in.

- Cook for another 3-4 minutes until thickened. Add salt to taste, and serve with bangers and mash, obviously.
