Vegan Veal-Style Medallions with Creamy Mushroom Sauce
- 30 ml soy sauce
- 70 ml dry white wine
- 140g soya medallions
- 200 ml creamy oat milk (Lidl Barista or Oatly Barista)
- 1 large onion, diced
- 2-3 cloves garlic, crushed
- Rosemary, paprika, salt and pepper
- 200g mushrooms, thickly sliced
- 2 tablespoons flour (corn flour preferably).
- Mix the soy sauce and white wine together in a bowl, and add the soya medallions. Stir around so the medallions are evenly coated. Add an additional 100ml of tap water, and leave, loosely covered for half an hour or so (or don't, it doesn't make much difference).
- Mix in the oat milk and raw chopped onion, along with the garlic, rosemary, paprika and pepper.
- Add enough water to almost cover the medallions.
- Bring to the boil and then simmer for 5 minutes until the onion is soft.
- Add the mushrooms and heat for a further 7-8 minutes.
- Season with salt to taste - do not hold back, it is essential for a full flavour.
- Put the flour in a cup, and add a splash of oat milk. Alternatively, you can take out some sauce by dipping the cup into it, being careful not to let too much enter the cup. Mix until smooth using a fork and then gradually add to the sauce.
